STANDARDS AND WEIGHT CLASSES FOR WHOLESALE
GRADES OF SHELL EGGS

§ 87.31. Standards.

 The following standards shall be used to classify wholesale grades of shell eggs:

	Maximum percentage of eggs			Maximum tolerance permitted

   ¹ Substitution of eggs possessing higher qualities for those possessing lower specified qualities shall be permitted.
